Keto is in stark contrast with the Indian cuisine. While Keto aims to reduce and minimalise carbs in the diet, the typical Indian meal is loaded with it. So here we are, dishing out some interesting keto-friendly recipes for a 100% keto diet:-
- Coconut Shrimp Curry with Cauliflower Rice
Coconut helps in boosting our immunity and contains good fats. Try to consume it in your meals. Remember to never overcook your proteins (Shrimps) as they get deprived of nutrients. Sauté onion garlic green chillies in ghee. Add coconut milk, spices and cook. Put sautéed shrimps and serve with fresh basil. You can also use fish instead of prawns.
- Chicken Curry
Chicken curry is a dish loved in most Indian families. But Keto wise, focus on your curry style. Make a paste from ginger, garlic, onion, coriander and green chilli. Cook this paste with some ghee. Then add spices, fresh tomato puree and boneless chicken thighs. Simmer for 25-30 mins. You can add diced carrots and celery for flavour and fibre. Feel free to use Indian spices like garam masalas and coconut cream for added richness.
- Palak Paneer
Spinach is a very low carb Indian superfood. Boil the spinach and blend it to make a smooth paste. Mix it with paneer and Indian spices. It not only tastes lip-smacking but is extremely healthy and Keto friendly. For added flavour, you can add coconut cream and a spoon of ghee.
- Baigan ka Bharta
Roast the Baigan (Eggplant) in the stove till its skin is charred. In a pan, add some ghee, and sauté cumin, sliced onions and tomatoes with added spices of choice. Remove the outer skin of the eggplant; mash it in a bowl before adding it to the curry mix. Garnish with chopped coriander and a dash of ghee.
- Paneer or Egg Bhurji
Both are rich sources of protein, so you can switch to either, according to your mood. Finely chop some ginger, garlic, spring onions, onions, tomatoes and capsicum. Cook in medium heat and then add grated paneer or beaten eggs. Add spices and serve with coriander or basil.
